Description:
This is a retrospective study conducted on the use of community cookbooks as pedagogical tools for undergraduate students. The purpose of this research is to determine how much insight on a community a cookbook can truly offer and use that insight to further benefit low income communities. Our research questions stand to be: How are community cookbooks reflective of nutritional availability and economic limitations? How can community cookbooks assist undergraduate students in understanding the stratification of nutritional access and food security when considering interlocking networks/legal precedence of race class and gender?
