Description:
This research project employs behavioral and experimental economics as the main approach to address these two gaps. As the U.S. Department of Agriculture has taken several steps to advance the goals of building more sustainable, resilient, and inclusive food systems while ensuring nutrition, this research project focuses on misinformation regarding the healthfulness and sustainability of food products with an emphasis on race/ethnic minorities. Particularly, we will build upon the behavioral economic literature on information avoidance, uncertainty avoidance, and satisfying and conduct incentive-compatible economic experiments to provide research that supports the promotion of healthy and sustainable food choices with a focus on vulnerable consumers and ultimately improve human health, protect the planet, and promote equity.
